Banana loaf recipes.

Banana loaf can be really popular - it's a good way of using up spare over ripe bananas, it's easy to make and quite healthy - super delicious too.


Here are a couple of different recipes - 1st one is from Lola's Forever recipe book and the other one my running club buddy Fiona MacKenzie passed onto me years ago - I have lost track of the amount of times I have made it!




Banana Loaf with Chocolate Chunks.


1 teaspoon bicarbonate of soda.

50ml of full fat milk ( I used semi skimmed).

115g butter.

115g granulated sugar.

2 eggs.

3 large over ripe bananas - mashed with fork.

190g self raising flour mixed with 2 teaspoons of baking powder.

40g dark chocolate chunks.

40g milk chocolate chunks. Don't worry if you just have one type of chocolate though - just use that.


Serves 10-12 people.


Over to 160C/Gas 3.

Mix the bicarbonate with the milk and set aside. Put the butter and sugar in mixer and beat till light and fluffy - might take 1-2 minutes. Slowly add the eggs one at a time then the banana mix.

Add the flour and baking powder slowly - alternating with adding the milk mixture. Then stir in the chocolate. Pour into loaf tin and bake for 45-50 minutes in oven till skewer comes out clean. Let it cool in the tin.....Enjoy!

Fiona MacKenzie's Banana Loaf.


2 very ripe bananas - mashed.

2tsp cinnamon.

110g sugar - granulated or caster.

110g margarine.

2 eggs.

225g self raising flour.


Fiona's tip was mix these ingredients all the order above - this works best - till well blended. Pour into greased loaf tin and bake in a preheated Oven at 180 C for 50 minutes till golden and firm. Enjoy.....
