Lemon Fudge Slice Recipe....yum.

I really like this recipe - it is easy to make and delicious. I make it a lot for markets and it is always a winner. It has a bit of a summery feel to it with the lemon in it.


In the picture below it on the bottom left...the others are from top left to right - custard creams and mint aero rocky road. On the bottom from left to right - lemon fudge slice, chocolate traycake and millionaires shortbread.



I made it with digestive biscuits once but it was too soft so stick to rich teas!


I got it from the Mum's Recipe Book -a friend gave it to me for my birthday a few years ago and I have made most of the recipes in the book - so it must be good!


So what you need is:-


450gms/1lb of rich tea biscuits.

100gms/3 1/2 ozs of desiccated coconut.

grated rind of 1 lemon.

200gms/7ozs of butter.

397gms condensed milk.


The icing is:-


175gms/6oz sifted icing sugar. lemon juice.



Method is:-


1. Crush your biscuits- I put a few in a freezer bag and bashed it with a rolling pin. Then add coconut and lemon rind.

2. Melt the butter and add the condensed milk.

3. Add to the dried ingredients and mix.

4.Press into a greased traycake tin - you need quite a big one.

4.Mix the icing sugar into the lemon juice and drizzle over the top making a nice pattern or spread it over completely. Leave it to set for a few hours and cut into squares.
