Flapjack Biscuit Recipe.

Writer's picture: Val BeattieVal Beattie

I really like this recipe. My friend lent me one of the Jamie Oliver books I don't have - 5 Ingredients - Quick and Easy Food.

There is a great mix of recipes and have tried a few - with just having 5 ingredients and the way the book is laid out it makes it seem the recipes are easy and I have found that. Tasty too!

I made these for taking in to work and snacking on. They feel quite healthy as they are 140 calories each and kept me going.

So here is the recipe! It makes 16 servings.

Buddy's Flapjack Biscuits.

100g unsalted butter - at room temperature.

100g mixed dried fruit and nuts.

100g porridge oats.

100g self raising flour.

100g golden syrup.

Preheat the oven to 180C/350F/Gas mark 4. Line a deep 20cms baking tin with greaseproof paper and rub with olive oil. Pulse the butter, dried fruit and nuts, oats and flour in a food processor until mix comes together - I just put it in my stand mixer which seemed to work fine.

Add and mix in the syrup then transfer to the lined tin, flattening to the edges. Bake for 15-20 mins. Remove from oven - slice into 16 squares ready to cut and leave to cool in tin for 5 minutes. Use the paper to lift it out and cool on wire rack.

Enjoy! Val.
