Happy New Year cake lovers! Hope you had a good time and are beating those January blues. I can see it is getting lighter at nights so that is always good.
I had a nice time celebrating and had a few days off baking after the busyness of December.
Time to don the apron again and get baking again!
This recipe is one that my mum used to make us a lot and it is cheap to make which is always handy for this time of the year. They fill you up too. The recipe I had said to put orange extract in it but that's not what I remember I put mixed spice in - if you have cinnamon or nutmeg or ginger - they would all work well too.
This is a nice recipe to try with kids too.
So here it is!
Ingredients.
70 grams Caster Sugar.Raising Flour.
65grams Butter.
70grams Caster Sugar.
1 Egg.
2-3 tablespoons of Milk.
1 teaspoon of Mixed Spice. 100 grams of Mixed Dried Fruit. ( I just used Raisins).
Method.
Preheat the oven to 190C or 170 C fan assisted oven or Gas Mark 5 and grease a couple of baking sheets with a little butter ( or use greaseproof paper).
In a large bowl, sift the flour. Add the butter and rub together with your fingers until it becomes like breadcrumbs.
Add the sugar and egg to the mixture. Add the milk one spoonful at a time, mixing together to create a thick, sticky dough - you may not need all the milk.
Add the spice and mixed dried fruit. Mix until the dried fruit is evenly distributed through the dough.
Place a tablespoon size amount of dough onto your baking sheets. Repeat with the rest of the dough, leaving space in between each one. Don't make them neat - they are supposed to look like rocks!
Bake in the preheated oven for 15 minutes until they have a nice golden colour.
Allow to cool for a wee while before you put them on a wire rack to cool completely.
Best eaten warm.....enjoy!
