This is another one of my mum's recipes. It is really tasty and there are various options you can do with it.
You can flavour it with vanilla or almond is nice too. You can add chocolate to the mix for a tasty chocolate chip shortbread. The shapes you can make with the are endless....so perfect for any occasion. I was asked to make 150 shamrock shaped shortbread so this recipe was perfect for it and used a shamrock cutter for it.

For Halloween I made shortbread using Halloween cutters then used the same cutters with fondant icing then stuck it on to one another with a scant amount of water.

So here it is!
Ingredients - 8 ounces of Plain Flour.
4 ounces of Icing Sugar.
4 ounces of Cornflour.
8 ounces of Butter.
Pinch of Salt.
Vanilla Essence( if you would like that flavour).
Set oven to 160 C. Cream the butter and sifted icing sugar then add the flour and cornflour. Then add the salt and flavour. Roll out mixture and cut out your shapes. Bake for 20 minutes.
