Mum's the word! Cookie dough and cupcakes

Baking with kids can be tricky. The first time I tried it, it was stressful.......we were just going to make some cookies and we did manage but I did learn a few things...

1. Get all your ingredients and everything out before you get them through to 'help'.

2. If they are to break the eggs do it into a cup or something not straight into the mix unless you want eggshells in there!

3. Don't try and tidy at the same time. Wait till it all over!

This is a very good cookie dough recipe and you can add any flavour you want or it is nice plain. Cookies are good as you can use any shape of cutter you like which is lots of fun.

Cookie Dough - 225g soft butter,

110g caster sugar,

275g plain flour.

spice or grated zest.

Oven to 180C. Cream butter then add sugar and beat till light and fluffy. Sift in flour and any spices or zest you are adding. Bring mix together then roll out the mix.

Use hand to roll into balls the size of walnuts and flatten slightly. Bake for 13-15 minutes.

If you want you could decorate them with icing and sticking sweets or sprinkles on them.

Glace icing is great for being the glue to stick on cookies and easy to make.

All you do is sift icing sugar into a bowl and add small amounts (teaspoon at a time) of boiling water and mix till quite heavy to stir - that's the right consistency!

Kids ask a lot about making cupcakes....again they are really popular, can be decorated with gusto and tasty. You can get fancy with lots of different flavours and colours but most kids will be happy with these.

Here is an easy cupcake recipe.

Vanilla Cupcakes.Makes 12.

175g butter.

175g self raising flour.

175g caster sugar.

1/2 tsp. baking powder.

1/2 tsp. vanilla extract.

3 large eggs.

Oven to 180C. Put cupcakes cases in tin. Put all ingredients in together and mix with a hand mixer. Cook for 20-25 minutes. Leave to cool on wire rack.

Buttercream Recipe.

140g Butter.

280g Icing Sugar.

1-2 tablespoons of milk.

Cream butter. Sift icing sugar in and mix together. Add milk a tablespoon at a time and allow to mix in before you add more milk. If you want to add colour do it now.

Use a knife to spread it on or a piping bag then add sprinkles of your choice.
