My lovely mum has been collecting recipes from her local paper up North and I collected them all when I was up last week. My mum did not let me down with gathering this selection for me - ranges from Empire Biscuits to Caramel Shortcake to Malteser Slice to Macaroni Pies to Cupcakes to Sultana Cake. I could go on and on....
The one that jamp out that I had to bake as soon as I got home was the.....
GOLDEN SYRUP CAKE......
Yes it is as good as it sounds....and very easy to make......get your oven on.......
Ingredients.
100g Butter.
50g Caster Sugar.
50g Soft Brown Sugar.
200g Syrup.
200g Self Raising Flour.
1 Egg.
150ml Milk.
2 tbsp. Golden Syrup.
Method.
1. Pre heat the oven to 160C (140 fan) or Gas Mark 3 and grease and line a 2lb loaf tin with greaseproof paper.
2. Place the butter, syrup and sugars into a medium pan and heat gently until just melted together, stirring occasionally. Once melted together, set aside and allow to cool for at least 10 mins.
3. In a small bowl or jug beat the milk and egg together. Set aside.
4. In a large bowl, sift the flour. Add the egg/milk mix and the cooled syrup mix and beat until combines and you have a lump free batter.
5. Pour the mix into loaf tin.
6. Bake in pre heated oven for around one hour till golden on top and skewer comes out clean.
7. Leave to cool for 10mins before piercing the cake all over with a skewer and spreading two tablespoons of syrup over the top.
8. Allow to cool completely. For best results, leave the cake in the greaseproof lining and add a piece of extra greaseproof paper to the top then wrap in tinfoil for a few days. This will deepen the flavour.
Enjoy and don't forget my bit! Val.
