Sultana cake recipe!

This is a really good recipe - I made it for my workmates earlier this week and they loved it. It's an easy recipe and you can't really go wrong.


It feels quite healthy too as it has sultanas in it! You could use any other dried fruit you have e.g. raisins, currants.



So here it is!


Ingredients you will need is:-


140 g caster sugar.

140g caster sugar.

3 eggs.

225 g self raising flour.

1/4 tsp. lemon extract.

170 g sultanas.


Method.


Preheat your oven to 170 C/ fan 150 C and line a 7 inch( or anything near to that size) cake tin with greaseproof paper. In a large bowl cream butter and sugar together till light and fluffy.


Add the eggs one a time - make sure they are mixed through before adding each egg. Add the lemon extract. Sift the flour and add by folding it in to mix - folding gives more air into the mix so you get a better rise in the cake.


Add the sultanas and make sure they are evenly distributed.


Put cake batter in tin and bake for about one hour till golden, risen and when you put a skewer in it comes out clean.


Leave to cool in tin for a few minutes then transfer to wire rack to cool completely.
