What a scorcher of a summer so far... hope you are all enjoying it!!
Sometimes not the best time to be me having the oven so much as I do!! Time for a Summer recipe! I made this for my market at the Royal Bank at Gogarburn today and it sold out!

Raspberry and White Chocolate Loaf.
Ingredients-
125g Butter.
125g Caster Sugar.
3 eggs.
175g Self Raising Flour.
1/2 tsp. Baking Powder.
1 tsp. Vanilla Extract.
1 tbsp.Milk.
125g Raspberries.
75g White Chocolate - cut into chunks or use drops. plus another 75g to top cake with.
Method-
1.Heat oven to 170C and grease a line a 2lb loaf tin. (You could make it into a cake and put it into a cake tin instead).
2.Whisk together the butter, sugar,eggs, flour, baking powder, vanilla extract and milk unitl light and fluffy.
3. Add the raspberries. ( I toss them in flour to stop them falling to the bottom of the cake - DO THIS BEFORE YOU ADD TO CAKE). Then the white chocolate - gently fold them in and be careful not to break up the raspberries.
3. Spoon into tin and cover with a sheet of tin foil - bake for 40 mins.
4. Remove the foil and bake for further 20-30 mins until golden and springy to touch.
5. Let it cool slightly then put on wire rack to cool complete;y.
6 Melt the chocolate (I just melted it in the microwave) then drizzle over the top. Add some fresh raspberries if you like.
7. Enjoy...it's delicious!!
